Among the new arrivals at Bar Daskal is Cayetano del Pino’s Palo Cortado ‘Viejísimo’, a remarkable 30-year-old sherry with exceptional depth and complexity. Palo Cortado is one of the more elusive styles of sherry, combining the delicacy and aromatic character associated with Amontillado with the richness and structure of Oloroso. The result is a wine that is both elegant and deeply concentrated, with layers of toasted nuts, dried fruit and spice developing in the glass.
Also joining the list is Oloroso Seco VORS ‘Cuco’, an incredibly rare bottling from one of Barbadillo’s oldest soleras, dating back to 1821. VORS, or Very Old Rare Sherry, is reserved for wines with an average age of at least 30 years, making ‘Cuco’ a particularly special expression of Oloroso. Rich, dry and wonderfully layered, it brings together the oxidative character of the style with remarkable concentration and length, revealing notes of roasted nuts, dried fruit, spice and wood.
Both bottles offer a glimpse into the extraordinary depth and history of the world of sherry – wines shaped by time, tradition and the unique ageing systems of Jerez. Two remarkable bottles, with decades (and in the case of ‘Cuco’, centuries) of history behind them, now pouring at Bar Daskal.
