We work with small, family-run producers across Spain – specialists who’ve been refining their craft for generations and who share our commitment to quality, sustainability, and respect for the land. These partnerships support local communities, protect Spain’s incredible biodiversity, and honour traditional methods. Together, they bring our vision of a true Spanish ‘restaurante de productos’ to life, where every dish celebrates responsibly sourced, consistently exceptional produce, prepared with the simplicity that great ingredients deserve. Here are some of the partners who make this possible.

Mevalco
Twenty years ago, veterinary surgeon David Menendez founded Mevalco to share the artisanal products of his Asturian homeland and the wider provinces of Spain with British chefs. His deep respect for animals and producers who cherish tradition drives his mission to preserve Spain’s rural communities, through sharing their exceptional ingredients with appreciative customers across the UK.
David and Mevalco are among Barrafina’s most valued partners in sourcing sustainable Spanish produce. We share the goal of representing the biodiversity of Spain, its heritage and culture.

Quesos y Besos
Founded in 2016 by a husband-and-wife team in Guarromán, Jaén, Quesos y Besos draws on a family heritage of shepherding. Silvia Pelaez leads the small team creating extraordinary goat’s cheeses from their own herd, crowned by their Olavidia, which was named World Champion at the 2021 World Cheese Awards.
At Barrafina, we present the intense, creamy, charcoal-matured Olavidia as one of our hero cheeses on our menu.

Condado de Martiniega
Produced in Navarra by a small family estate, Condado de Martiniega extra virgin olive oil is cold-pressed from mechanically harvested fruit. The resulting oil is vibrant and balanced, with notes of green almond and fresh grass that capture the purity of the region’s harvest.
Our Senior Head Chef at Barrafina Adelaide Street, Ignacio García Vicente, is part of the family behind Condado de Martiniega. Brothers Carlos and Javier Jiménez serve as co-CEOs of the estate, continuing the family tradition and sharing their deep knowledge of cultivation methods and olive oil production. We use this precious, small-batch oil for dressings and finishing dishes, where its flavours remain pure and unadulterated by heat.

Hispamare
In 1953, Don Manuel pioneered innovative storage techniques in the Gulf of Almería to guarantee the highest quality catch. In 2015, his grandsons Luis Miguel and Javier launched Hispamare, bringing their family’s six-decade fishing tradition to the world’s finest restaurants. Today, they operate fleets in the Mediterranean and West Africa, using pioneering IQF freezing systems to ensure exceptional quality and freshness while advancing sustainable fishing practices.
At Barrafina, we source much of our seafood from Hispamare, from carabineros to quisquillas.

Bodegas Hidalgo
Bodegas Hidalgo is a family-owned sherry house from Sanlúcar de Barrameda, with a history stretching back over 180 years and eight generations. The house is known as one of the most meticulously maintained and successful wineries in the Jerez region, creating sherries ranging from floral notes to caramel and warm spices. Today, eighth-generation Fermín Hidalgo serves as general manager, bringing creative thinking and dedication to quality that honours the family’s longstanding winemaking tradition.
We serve Manzanilla ‘La Gitana’ and Oloroso Cream ‘Alameda’ from Bodegas Hidalgo, and the winery also produces our ‘Hart Bros Manzanilla en Rama,’ available across all our restaurants.

Gallinas y Focas
Gallinas y Focas unites Mallorcan winery 4 Kilos with the Amadip Esment Foundation, which has supported people with intellectual and developmental disabilities, and their families, since 1962. The foundation’s community chose the name “Hens and Seals” – for the reason that hens are funny and seals clap – and created the illustrations for the label. The wine provides employment for foundation members and is made by Francesc Grimalt, whose work has rescued and reintroduced Mallorca’s native Callet grape. Proceeds from our Barrafina Invita dinners directly support Amadip Esment’s work.

Bodegas Muga
In 1932, Isaac Muga and Aurora Caño founded their wine business in Haro, La Rioja, where the Muga family had lived for 300 years. Today, the energetic third generation runs the winery in the historic Barrio de La Estación. Manu Muga, alongside his brothers Juan and Eduardo, leads the commercial and export strategy, ensuring the family’s dedication to traditional winemaking continues to reach the world’s finest restaurants.
This partnership holds particular meaning for Sam Hart, whose parents’ Relais & Châteaux hotel, Hambleton Hall, has listed Bodegas Muga wines for over 35 years.
