Barrafina Invita 12: Eduardo Salanova of Canfranc Express

On Tuesday 22nd July, we’re delighted to welcome Eduardo Salanova of Michelin-starred Canfranc Express to Barrafina Borough Yards for the latest edition of Barrafina Invita.

Set inside a beautifully restored 1927 railway carriage in the Aragonese Pyrenees, Canfranc Express has become one of Spain’s most exciting restaurants. Awarded a Michelin star just five months after opening, the restaurant celebrates the culinary traditions of Aragón’s mountain valleys through contemporary techniques and an unwavering commitment to local produce.

Born and raised in Canfranc, Eduardo trained in some of Spain’s most celebrated kitchens, including Echaurren and Ángel León’s three Michelin-starred Aponiente, before returning home to open Canfranc Express alongside his partner Ana Acín. Together, they have created a restaurant deeply connected to its landscape, history and people.

Barrafina Invita Menu

For his Barrafina Invita menu, Eduardo will explore what he calls the “cuisines of two valleys” – a culinary journey across the Pyrenees, where Aragón and France meet. Drawing on shared traditions from both sides of the border, the menu brings together stories, ingredients and recipes that have travelled through these mountains for generations.

Guests can expect a tasting menu that begins with La Liturgia de las Migas, a series of opening snacks, before dishes including beetroot salmorejo with pickles, inspired by the beet harvesters’ protests of 1914; lobster with Bardají’s recao, a tribute to the influential Aragonese chef Teodoro Bardají; and an arroz meloso inspired by the rich flavours of Béarn’s garbure.

The menu continues with seasonal fish à la Aragonesa and Aragonese lamb inspired by the celebrated salt-meadow lamb of Mont Saint-Michel, before finishing with El Empanadico de Calabaza, a traditional pumpkin pie.

Eduardo’s cooking is thoughtful, inventive and deeply rooted in place, making this a rare opportunity to experience one of Spain’s most exciting regional voices in London for one night only.

The evening includes a Gin Mare welcome drink on arrival.
